Boracay's Calamansi Muffin

Aside from the attractive match of white powdery sand and clear emerald beach water of one of the world's best island Boracay, one item that you should not miss is its well known delicacy the "Calamansi Muffin".

Calamansi Muffin is just sugar, flour, milk, egg and of course calamansi perfectly mixed together and baked to create a tasty muffin which is soft, slightly toasted golden brown, unique, fresh and zesty, brought about by the sourness of Calamansi.

Where to get/buy Calamansi muffin in Boracay?

Calamansi muffins are available in the famous "Real Tea and Coffee Cafe" located in Station 1 near Yellow Cab Pizza and "all-flip-flops" stores and between Aztoria and Zuzuni. The place is simple and perfect for hang out especially when you want to chill with their muffins, brownies, cookies, and pancakes. Aside from Calamansi muffin, they also offer Banana Walnut and Carrot & Raisin muffins.

Each muffin costs Php 45. You can also purchase a box of six (6) for Php 285, a box of nine (9) for Php 425, or a box of twelve for Php 560.

To secure a box (6, 9 or 12), interested buyers are advised to order one day in advance as Real Tea and Coffe Cafe receives a huge number of customers and reservation.

Ingredients: one-half cup of butter, a cup of sugar, two (2) pieces of eggs, one and a half cup of all purpose flour, 1 tsp baking powder, 1/4 tsp salt, 1/4 cup milk, 1/4 cup calamansi.

Procedure

  • Mix together dry ingredients in a bowl: flour, baking powder and salt. Set aside.
  • Mix together milk and calamansi in a bowl, set aside.
  • Cream butter and sugar for 2-3 minutes.
  • Add eggs one at a time and mix well.
  • Add in milk mixture and flour mixture.
  • Mix until well blended, don't over mix.
  • Scoop in non stick muffin pans.
  • Bake in preheated 350 degrees Fahrenheit oven for 18-23 minutes.
This recipe can make a dozen of Calamansi muffins.
